[Zope-CMF] Newbie: Why is only the "default" workflow available?

Hi,

I'm trying to add a custom workflow in CMF, but the only
type available is "default_workflow (Simple Review /
Publish Policy)".  I have the same problem on both
FreeZope.org and a local instance of Zope2.5/CMF1.2 running
on my PC.

What am I missing?  Is there a switch to flip somewhere
that would allow me to create & customeize my own workflow?
