Go to the portal_memberdata tool and click on the 'Properties' tab. Add any 
extra properties you need there. The value you specify will be the default for 
that member.

The user object will be stored in acl_users.
The member data is stored in the portal_memberdata tool. Click on the 'contents' 
tab of that tool for mroe information.
