[Zope] Logging under Apache/pcgi?

Enabling logging under ZServer is simple enough and
fully documented in the doc/LOGGING.txt file.  Where
does one set the STUPID_FILE_LOGGER environment
variable when running with pcgi under Apache?  Do
you simply set it in the Zope.cgi script?
