In my from-zope-org-tarball installation i have 
/usr/local/zope260/zpasswd.py to change admin password and 
/usr/local/zope260/doc/INSTALL.txt where all this things are decribed. 
And as i remember, zope intaller asks you about login\pass during 
installation process...

Locate the Zope dir and do 'bin/python/zpassd.py --username=admin'
