Nothing, unless you choose to put the new Zope in the old place.

Do not do that (until everything works to your needs).

This is not necessary.

When your new Zope should use the same ports as your old
one, you must shutdown the old one before you can start
the new one.

But for testing, just let the new one use different ports.

Yes, at least ideally.
There might be some problems (such as missing products).

No, unless you want only to move part of your Zope site.
Even then copying and deleting is usally better...
