Another note here: We use a batch file to map drives letters for an automated DOS application that does a scripted overnight run. If the drive letters are mapped on the open desktop the schedule service cannot map the drives. While drive mappings are user specific, only one set can be active at a time. (Not very multiuser friendly) Probably different behavior under winframe environments.

ODBC DSNs don't require drive mappings, use UNC names by typing them into the filename prompt.
To map drives under the service's login account, login to the machine as the service account and map the drives. This will however prevent you from unmapping the same drives as a different user from the desktop. This can be very confusing if you are not aware of what is going on.
I don't use NFS so I can't address that specifically, but try the UNC's (sometimes you can sub them in the settings file even when the GUI doesn't allow the config.)
