Far as I know, the best way to expand on the user information that is stored is to move to a more powerful user-management product. I found GenericUserFolder easy to use, configure and expand, and it's simeple and (hence) really stable. It has been supplanted by more powerful products like CMF and SQL things, but when I looked a few weeks/months ago all the alternative were either still development releases or much harder to get going.
