My best shot would be to use snagIt from www.techsmith.com which can create an avi file from a screen capture, and then import that into flash as an animation. www.zope.com contains some very nice Flash demonstrations of CMF that were probably made with a software that can capture user actions in Windows and save them to a .swf file.

What kind of software can do this sort of thing?
