You can define INSTANCE and SOFTWARE_HOMES in the start up script. See 
the section in the Zope Book. Please see the Zope book, 
http://www.zope.org/Documentation/Books/ZopeBook/2_6Edition/InstallingZope.stx, 
"Environment Variables that Effect Zope at Runtime"
And please keep this on the list, oher people may have the same question.
